How to store fior di latte (and 3 mistakes to never make)

Fior di latte is a living cheese: it’s made in the morning, it’s at its best in the first few days and it changes quickly if it isn’t treated well. Here’s the advice we always give our customers.

The golden rules

  • Keep it between 0 and 4 °C, in its own liquid, in the original packaging.
  • Keep it covered: fior di latte easily absorbs fridge smells.
  • Take it out 30 minutes before eating: at room temperature the flavour opens up and the cheese becomes soft and juicy again.
  • Once opened, eat it within 2 days, always covered in its liquid.

3 mistakes to never make

1. Throwing away the liquid

It’s what keeps fior di latte soft and moist. Without it, it dries out in a few hours and turns rubbery. If it has spilled, you can use fresh water with a pinch of salt.

2. Putting it in the freezer

Freezing breaks the structure of the stretched curd: once thawed it loses water and becomes grainy. At most it’s fine for a pizza or a parmigiana, never to eat raw.

3. Eating it straight from the fridge

Cold “locks in” the aromas of the milk. Half an hour out of the fridge makes a huge difference – try it and see.

And for pizza?

For homemade pizza the trick is the opposite: cut it into strips a few hours before and let it drain in a sieve in the fridge. That way it won’t release too much water while baking.

How it reaches your home

Precisely because it’s so delicate, our fior di latte always travels chilled: with the BRT Fresh refrigerated courier where it’s available, otherwise in a sealed polystyrene box with ice inside. We ship from Monday to Wednesday, so the parcel never sits still over the weekend.
