IN FOUR STEPS
From our counter to your home
1
We pack it by hand
It doesn’t come from a warehouse: we take it from the dairy and pack it ourselves, order by order.
2
We seal it in the cold
BRT Fresh refrigerated courier where available, otherwise a sealed polystyrene box with ice.
3
It leaves early in the week
Monday to Wednesday, so it never sits in a depot over the weekend. You’ll get an email to track it.
4
It arrives in 24/48 hours
Open the parcel and put the cheeses straight in the fridge. You’ll find the rest below.

WHY ONLY EARLY IN THE WEEK
The enemy is the depot, not the road
A parcel sent on Thursday or Friday risks spending Saturday and Sunday in a courier’s warehouse. For a fresh cheese, those are the most dangerous hours of the journey.
That’s why orders placed from Thursday to Sunday leave the following Monday: you wait a few days longer, but the cheese arrives as it should.
WHEN YOU OPEN THE PARCEL
How to store them at home
FRESH CHEESES
Fior di latte, braids, tortani, bocconcini
- In the fridge at 0–4 °C, in their own liquid.
- Once opened, eat them within 2 days.
- Take them out 30 minutes before eating.
- Don’t put them in the freezer.
AGED CHEESES
Provolone, caciocavallo, provoloncino, caciotta
- Wrap them in food paper, not cling film.
- Keep them in the least cold part of the fridge.
- Once cut, they keep well for weeks.
- Take them out half an hour before serving.
