Provolone del Monaco PDO: which size to choose and how much it costs

Provolone del Monaco PDO is the signature cheese of the Lattari Mountains and the one we care about most. We make it in our dairy in Meta in five sizes, from 500 g up to the whole 5 kg wheel. But which one should you choose? And why does it cost more than an ordinary provolone? Here is everything our customers ask us.
Sizes and prices of Provolone del Monaco
| Size | Price | Price per kg | Taste | Best for |
|---|---|---|---|---|
| 500 g | €16 | €32/kg | milder | a first taste, 2–3 people |
| 750 g | €24 | €32/kg | sharper | lovers of strong flavours, cheese boards |
| 1 kg | €30 | €30/kg | sharper | the family, grating over pasta |
| 3 kg | €85 | about €28/kg | milder | holidays, gifts, sharing with friends |
| 5 kg | €140 | €28/kg | sharper | the whole wheel, restaurants and big tables |
Prices include VAT. In Italy shipping is free from €50: from the 3 kg size upwards you never pay for shipping. In Germany, Austria, France, the Benelux, Spain and mainland Portugal shipping is free from €100.
Mild or sharp? It depends on the size
The sharpness of Provolone del Monaco doesn't come from spices or chilli: it is the natural note of ageing, which by regulation lasts at least six months. The 500 g and 3 kg wheels are less aged: a more buttery texture, a round flavour, only a hint of sharpness. The 750 g, 1 kg and 5 kg wheels are more aged: a bold, intense taste, excellent grated too.
If you have never tasted it, start with the 500 g. If your household loves strong flavours, go for the 1 kg.
Which size to choose
- For a first taste: 500 g, the mildest, best enjoyed in shavings taken out of the fridge half an hour before.
- For home: 1 kg. It keeps well for weeks and works both on the table and in the kitchen, for example in pasta e patate.
- For the holidays and gifts: 3 kg, mild and impressive. If you want to share it with family or friends we can cut it into 6 wedges: just write it in the order note.
- For restaurants and big tables: the whole 5 kg wheel, at the best price per kilo.
Why it costs more than an ordinary provolone
- It is PDO: it can only be made in the Lattari Mountains and on the Sorrento Peninsula, following strict rules.
- Raw cow's milk, at least 20% of it from Agerolese cows raised in the production area.
- Made by hand: the curd is stretched and tied with rope one wheel at a time.
- At least six months of ageing: during this time the wheel loses water and weight, so a kilo of Provolone takes much more milk.
How to store it
Wrap it in food paper, not cling film, and keep it in the least cold part of the fridge. Once cut it keeps well for weeks. Take it out half an hour before serving: at room temperature it releases all its aromas.
How it reaches you
We ship Monday to Wednesday, always chilled: by refrigerated courier where available, otherwise in a sealed polystyrene box with ice. In Italy it arrives in 24–48 hours, in the rest of the EU usually in 2–3 working days.
